Tropical, citrusy and rich, the South Stack Mai Tai combines our oak-matured Golden Rum with fresh lime, orange liqueur and almond-rich orgeat. A bold tropical serve that still keeps the character of the rum firmly at the centre.
Ingredients
- 50ml South Stack Golden Rum
- 20ml orange liqueur
- 25ml fresh lime juice
- 15ml orgeat syrup
- 5ml demerara syrup
- Crushed ice
- Fresh mint and lime, to garnish
How to Make a South Stack Mai Tai
Add the South Stack Golden Rum, orange liqueur, fresh lime juice, orgeat syrup and demerara syrup to a cocktail shaker.
Fill the shaker with ice and shake briefly until thoroughly chilled.
Fill a rocks glass generously with crushed ice.
Strain the cocktail over the crushed ice.
Crown with a little more crushed ice if needed.
Garnish with a spent lime shell and a generous sprig of fresh mint.

South Stack Golden Rum is made from scratch here on Ynys Môn before being matured in oak to develop a richer, rounder and more complex character.
That extra depth makes it particularly well suited to tropical cocktails where the rum needs enough structure to stand alongside citrus, orange liqueur and the distinctive almond character of orgeat.
The South Stack Mai Tai keeps the rum at the centre while lime provides freshness, orgeat adds richness and orange liqueur brings a bright citrus note. The result is bold, tropical and properly spirit-led.
