Môn Collins
A bright and refreshing Anglesey take on the classic Tom Collins. Anglesey Dry Gin, fresh lemon and a touch of sweetness are lengthened with soda for a crisp, easy-drinking cocktail that lets the gin's citrus and herbal botanicals shine.
Ingredients
- 50ml Anglesey Dry Gin
- 25ml fresh lemon juice
- 15ml sugar syrup
- 75–100ml soda water
- Plenty of ice
- Lemon wheel or wedge, to garnish
- Optional rosemary sprig
How to Make a Môn Collins
Add the Anglesey Dry Gin, fresh lemon juice and sugar syrup to a cocktail shaker filled with ice.
Shake well until thoroughly chilled.
Fill a Collins or highball glass with fresh ice.
Strain the gin mixture into the glass.
Top with chilled soda water and give the drink one gentle stir.
Garnish with a fresh lemon wheel or wedge. For a more aromatic serve, add a lightly clapped sprig of rosemary.

Built around bold juniper, the gin is lifted by bright orange citrus and layered with elderflower, mint and rosemary, giving it a clean and gently herbal finish.
The Môn Collins is designed to keep those botanicals at the centre of the drink. Fresh lemon brings brightness, a small amount of sugar balances the citrus, and soda lengthens the cocktail without masking the gin.
