45ml Raspberry & Verbena gin
7.5ml Dry vermouth
7.5ml Sweet vermouth
15ml Lemon juice
15ml simple syrup
15ml egg white (or chickpea water)
Add all ingredients to an ice filled cocktail shaker and shake hard. Discard the ice and then place cocktail back in shaker. Shake hard for 20-30 seconds to create foam. Strain into a coupe glass and garnish with raspberries.
